Paneer Jalfrezi

Ingredients

  • Onion: 0.50, sliced
  • Green pepper: 0.50, sliced
  • Chilli flakes: 1/4 tsp
  • Ginger: 7.50g, finely chopped or grated
  • Paneer: 1 block (225g), cut into bite-sized cubes
  • Garlic: 1.00-1.50 cloves, finely chopped or crushed
  • Salad Tomatoes: 1, chopped
  • Curry powder: 0.50 tbsp
  • Tomato purée: 16g
  • Brown sugar: 1 tsp
  • Stock cube: 0.50
  • Water: 150ml

Method

  1. Fry the paneer until brown, turning to achieve an even colouring then set aside.
  2. Soften the onion in the pan with the sugar and a pich of salt until brown and starting to caramelise.
  3. Add the sliced pepper and cook for 5-8 mins.
  4. Disolve the stock cube in water.
  5. Add the garlic, tomatoes, tomato purée, ginger, chilli flakes, curry poweder, stock and paneer to the pan and stir.
  6. Cook for 5-10 mins on a medium heat until thickened.
