Blue Cheese Gnocchi

Fill the void with cheese

Gnocchi with creme fraiche and spinach topped with grilled blue stilton.

Ingredients

  • Gnocchi: 500g
  • Parmesan: ~70g, grated
  • Creme Fraiche: 150ml
  • Spinach: 200g
  • Stilton: 200g, diced/crumbled
  • Pimento Stuffed olives (Optional)
  • Cherry Tomatoes (Optional)
  • Fresh bread (Optional)

Method

  1. Tear up the spinach into a colander
  2. Place the gnocchi in a pan of boiling water and simmer until the gnocchi start to float to the surface
  3. Drain the gnocchi into the colander, over the spinach. Shake to displace any trapped water
  4. Empty the gnocchi/spinach into an ovenproof dish and mix in the parmesan and creme fraiche
  5. Sprinkle crumbled stilton over the top
  6. Grill on a medium/high heat until the stilton is bubbling and golden
  7. Serve on fresh bread with cherry tomatoes, olives, and anything else you can think of.

Notes

You can also use fresh tagliatelle rather than gnocchi, although you'll need a lot more creme fraiche.
