Kashtouri

An Egyptian dish of rice, macaroni and lentils in a spicy tomato sauce.

Ingredients

  • Risotto rice: 150g
  • Macaroni: 150g
  • Red lentils: 150g (Or 1 400g tin green lentils)
  • Onion: 1, finely chopped
  • Garlic, finely chopped or crushed
  • Chopped tomatoes: 1 400g tin
  • Cayenne pepper: 1-2 tsp
  • Ground coriander: 1 tsp
  • Lemon juice
  • Salt
  • Black pepper

Method

  1. Bring water to a boil and fill a large saucepan. Add the rice and simmer for 5 minutes.
  2. Add the macaroni and lentils and simmer for 10 minutes or until rice, macaroni and lentils are tender.
  3. Drain and set aside.
  4. Meanwhile, heat some oil in a large saucepan and cook onions and garlic until softened. Stir in cayenne pepper, coriander, chopped tomatoes and lemon juice. Add salt and pepper to taste.
  5. Simmer for 5-10 minutes, stirring occasionally.
  6. Add rice, macaroni and lentils to the mixture.
  7. Serve hot.
